I have the follow config for boot:

  # Use the GRUB 2 boot loader.
  boot.loader.grub.enable = true;
  boot.loader.grub.useOSProber = true;
  boot.loader.grub.version = 2;
  boot.loader.grub.efiSupport = true;
  boot.loader.grub.efiInstallAsRemovable = true;
  boot.loader.efi.efiSysMountPoint = "/boot/efi";
  # Define on which hard drive you want to install Grub.
  boot.loader.grub.device = "nodev"; # or "nodev" for efi only
  boot.loader.systemd-boot.enable = true;
  #boot.extraModprobeConfig = "options nouveau noaccel=1 runpm=0 nofbaccel=1 modeset=1";
  #boot.kernelPackages = pkgs.linuxPackages_latest;

What might be causing this issue? What is a 'canonical' path?

I had to mount the boot partition at /boot as opposed to /mnt/boot...
