The Shairport is independent. You just need some software to record from the Toslink input and play this data back on the DAC. Both Jack and PulseAudio should be able to do that.

Strings containing some special charactes must be "quoted". There are several ways of giving parameters to device names; hw:0 and hw:ALSA and hw:CARD=0 and hw:CARD=ALSA are all the same.

In a mixer, selecting a device just changes which mixer controls are shown in the mixer. As for changing the default sound card, this is a different question, which has been asked before.

These features are not implemented by ALSA but by PulseAudio.
