Its exactly as secure as you configure it, since the proposed solution uses a centralized NFS file storage, it offers the same security features as you are used to. If you allow users to install software, then yes, they can install malware. If you don't allow them to, then no, they cant.

I like the command line as much as the next guy, but I struggle to understand why a GUI could not give you complete control over something like this.

I'm not a Linux Mint user, but I am fairly sure that it comes in three flavours 1. Linux Mint (uses Mate and Cinnamon for DE) 2. Linux Mint XFCE (which uses.. well, XFCE) and 3. Linux Mint KDE (..im guessing this uses KDE). If I just hear "Linux Mint" i would suspect he is actually using the first option :)
