I created 3 virtual interfaces with different MAC addresses all linked to the same physical interface. I see that they can successfully arp for the gateway (gw) and they can ping (the request is coming in the packet capture in Wireshark).

However the ping utility does not count the responses. Does anyone knows the issue? I'm running Ubuntu 14.04 in a VMware.

What is the question? You mention that ping does not count the responses, however ping -c1 stops sending after one ECHO_REQUEST which is the correct behavior according to the ping man page. –  Timothy Martin Jun 6 at 23:02

Ping is counting the responses - that's what the "1 received" means. Pings on two out of three interfaces received a response within the two-second default timeout. Send a higher number of packets, say, 5, and you'll get a better idea of how good your connectivity is. –  Mark Plotnick Jun 6 at 23:58
